My Aunt B, Uncle R and Aunt A are in town this week. Joe and I FINALLY got to spend some time with them at lunch Sunday after church. (Dan was feeling a bit under the weather and opted to stay home.) Uncle R is an AMAZING cook. The company was fantastic, it was great to catch up with my Aunts and Uncle over a relaxing lunch and hear all the news from their lives.
Uncle R had picked up a copy of Taste of Home's chicken recipes and found a couple of great items to try, including this WONDERFUL chicken salad... it had chicken, mayo, cashews and crunchy cucumbers stacked on a kaiser roll with lettuce... simply divine! We followed lunch up with a Smores Cheese Ball mix turned Cheese Cake from Wind and Willow. YUM!
